Grain salad

10 g P, 11 g F, 31 g CH

Serves 4

100 g wheat grains

500 ml vegetable stock

100 g red lentils

250 g celery

½ bunch spring onions

1 tbsp oil

4 tbsp herb vinegar




5 tbsp soya oil

salad leaves for arranging

1 Soak the wheat grains in cold water overnight. Drain, then cook in the boiling vegetable stock for about 30 minutes. Put the red lentils in a sieve. Rinse in cold water, and after 18 minutes add to the stock with the grains.

2 Wash, dry, trim and finely dice the celery stalks and spring onions. Sauté both in hot oil. Pour over the herb vinegar, and season with salt, pepper and a little sugar. Stir in the soya oil, and combine with the cooled wheat grains and lentils. Leave to stand for 30 minutes, then arrange over salad leaves and serve.
