Pizza Caprese with Cashew Cream

Ingredients

For the dough

  • 2 tablespoons olive oil
  • 2 cups pizza flour
  • ½ tsp sea salt
  • ¾ cup water
  • 1 tsp yeast

For the sauce

  • ½ tbsp italian herb mix
  • 1 medium tomato (chopped)

For the tomatoes

  • 2 medium tomato (thinly sliced)

For the cashew cream

  • ½ cup cashew nuts (soaked)
  • ½ lemon juice
  • 2 tbsps nutritional yeast
  • ½ tsp sea salt
  • 8 tbsps water

For the basil

  • ¼ cup fresh basil

Directions

  1. Prepare the dough by mixing all the ingredients and let it rise for at least 30 minutes, if possible let it rise overnight. The dough should not stick to your fingers.
  2. Preheat the oven to 480 F (250 degrees).
  3. Cover a baking try with baking paper and transfer the dough onto it.
  4. Work the dough into the corners until is as thin as possible.
  5. With an immersion blender, blend all the sauce ingredients and evenly spread it on top of the dough.
  6. Distribute the sliced tomatoes over on top of the sauce.
  7. To make the cashew cream, simply blend all the ingredients with an immersion blender until you have a smooth mix. Spread some dollops of the cashew cream all over.
  8. Bake the pizza for about 15 minutes or until the base is cooked and top with fresh basil before serving. Enjoy!
