Multigrain Protein Pancakes

- 1/2 cup whole oats
- 1 ripe banana
- 2 eggs
- ½ cup egg whites (about 4 egg whites)
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
Place all ingredients in the blender and blend until smooth. If the batter is too thick thin it will 1 tablespoon of almond milk or water.
Heat a non-stick skillet over medium heat. Spray with cooking spray or a little bit of coconut oil.Pour 1/4 cup of pancake batter per pancake in the skillet. Cook about 2 minutes on each side.
Serve immediately or freeze with plastic wrap or parchment paper between pancakes.
