200 g mixed salad leaves, ready-to-use
2 spring onions
1 red pepper
4 diced tomatoes
200 g mozzarella
6 tbsp olive oil
2 tbsp balsamic vinegar
2 tbsp freshly chopped basil
1 Wash and spin dry the salad leaves. Trim, wash and dry the spring onions, then cut into rings. Wash, dry, trim and deseed the pepper and cut into strips. Peel the avocado. Remove the stone and slice the flesh. Sprinkle with lemon juice, then combine with the other salad ingredients.
2 Drain the mozzarella, then cut into slices and add to the salad. Combine the balsamic vinegar, freshly chopped basil, salt and pepper, and pour over the salad.
