Matcha Green Tea Pancakes

While these pancakes may not look appealing at first, I know you will love them once you get a taste of them.

Makes: 9 to 10 servings

Total Prep Time: 15 minutes

Ingredients for the pancakes:

  • 1 ½ cups of almond milk
  • 2 cups of brown rice flour
  • 1 egg, beaten
  • 3 Tbsp. of white sugar
  • 2 Tbsp. of coconut oil, melted
  • 2 Tbsp. of powdered Matcha green tea
  • 2 Tbsp. of powdered hemp protein
  • 1 ½ tsp. of baker’s style baking powder
  • 3 Tbsp. of butter, soft and extra if needed

Ingredients for the topping:

  • 1 cup of Greek yogurt
  • ¼ cup of walnuts, chopped
  • ¼ cup of almonds, chopped
  • ¼ cup of banana chips
  • ¼ cup of dried cranberries
  • ¼ cup of golden raisins

Ingredients for the syrup:

  • 1/3 cup of maple syrup
  • 1/3 cup of powdered cacao
  • 3 Tbsp. of coconut oil

Directions:

  1. In a bowl, add in all of the ingredients for the topping except for the yogurt. Stir well to mix and set aside.
  2. Prepare the pancakes. In a bowl, add in all of the ingredients for the pancakes. Stir well until just mixed.
  3. In a skillet set over medium heat, add in the butter. Add 1/3 cup of the batter into the skillet. Cook for 3 minutes on each side. Remove and set aside. Repeat with the remaining batter.
  4. In a bowl, add in the ingredients for the syrup. Melt in the microwave for 30 seconds.
  5. Place the pancakes onto a serving plate. Add a dollop of the yogurt onto each pancake. Drizzle the chocolate sauce over the top. Garnish with the topping.
  6. Serve immediately.
