Healthy Citrus Salmon Salad

Make this delicious and filling salad dish whenever you need something especially light and healthy. It is perfect to make after any workout.

Makes: 2 to 4 servings

Total Prep Time: 35 minutes

Ingredients for the salmon:

  • 2, 4 to 6 ounce salmon fillets
  • 1 tsp. of extra virgin olive oil
  • 1 lemon, juice only
  • Dash of salt and black pepper

Ingredients for the salad:

  • 3 to 4 cups of baby spinach
  • 1 pink grapefruit, peeled and cut into sections
  • 2 navel oranges, peeled and cut into sections
  • 1 avocado, thinly sliced
  • ¼ to ½ cup of almonds, thinly sliced
  • ¼ cup of green onions, thinly sliced
  • 1 lemon, juice only
  • 2 tsp. of extra virgin olive oil
  • Dash of salt and black pepper

Directions:

  1. Preheat the oven to 425 degrees. Place a sheet of parchment paper onto a baking sheet.
  2. Place the salmon fillets onto the baking sheet. Squeeze the lemon juice and oil over the top of the fillets. Season with a dash of salt and black pepper.
  3. Place into the oven to bake for 20 to 25 minutes or until cooked through. Remove and set aside to cool completely.
  4. In a bowl, add in the spinach, orange sections, grapefruit sections, sliced avocado and salmon. Toss well to mix.
  5. Add the fresh lemon juice, green onions, sliced almonds and olive oil. Season with a dash of salt and black pepper. Toss well to mix.
  6. Serve immediately.
