No Sugar Dessert

Coconut and Chocolate Pudding

This is a simple and delicious no sugar dessert dish that you can make any night of the week. It is easy to make and a simple dish that will satisfy your strongest sweet tooth.

Makes: 8 servings

Total Prep Time: 10 minutes

Ingredients:

•         1 cup of light coconut milk

•         ¼ cup of powdered cocoa

•         2 Tbsp. of cornstarch

•         ¼ tsp. of salt

•         1 ¼ cups of unsweetened almond milk

•         ¼ cup of light brown sugar

•         2 Tbsp. of white sugar

•         4 ounces of chocolate, chopped

•         ½ tsp. of coconut extract

•         2 Tbsp. of unsweetened coconut, shredded and lightly toasted

Directions:

1. In a bowl, add in the coconut milk, powdered cocoa, cornstarch and dash of salt. Stir well to mix and set aside.

2. In a saucepan set over medium to high heat, add in the almond milk, light brown sugar and white sugar. Stir well to mix. Allow to come to a boil.

3. Add in the coconut milk mix and stir well to mix. Allow to come back to a boil. Cook for 2 minutes. Remove from heat.

3. Add in the coconut milk mix and stir well to mix. Allow to come back to a boil. Cook for 2 minutes. Remove from heat.

4. Add in the chopped chocolate and coconut extract. Stir well until smooth in consistency.

5. Spoon the pudding into dessert dishes.

6. Sprinkle the shredded coconut over the top before serving.
