Caribbean Salad with Orange Vinaigrette

This is a healthy salad you can make whenever you are craving something on the lighter side. Feel free to top this salad with your favorite toppings for the tastiest results.

Makes: 2 servings

Total Prep Time: 5 minutes

Ingredients:

  • 1 bunch of Romaine Lettuce
  • 1 pound of chicken breasts, boneless, skinless and grilled
  • 1, 8 ounce can of mandarin oranges, drained
  • 1 red bell pepper, thinly sliced
  • 4 to 5 green onions, thinly sliced
  • 1/3 cup of cilantro, chopped
  • 6 to 8 Tbsp. of dried cherries
  • Sesame seeds, lightly toasted
  • Pineapple, chopped and for topping

Ingredients for the vinaigrette:

  • ¼ cup of orange juice
  • 3 Tbsp. of white wine vinegar
  • 1 ½ tsp. of dried mustard
  • 2 Tbsp. of white sugar
  • ¼ tsp. of sesame oil
  • ¼ tsp. of salt
  • ¾ cup of canola oil

Directions:

  1. Prepare the vinaigrette. In a blender, add in all of the ingredients for the dressing. Blend on the highest setting until smooth in consistency. Pour into a container and set into the fridge to chill.
  2. In a bowl, add in the romaine lettuce, grilled chicken breasts, drained mandarin oranges, sliced red bell pepper, sliced green onions, chopped cilantro, dried cherries, toasted sesame seeds and chopped pineapple. Toss well to mix.
  3. Drizzle the vinaigrette over the salad and toss again to coat.
  4. Serve immediately.
